The best monsters to farm humanity will vary depending on how far into the game you are, but the rats in depths are good, the blue sea monster looking things at the bottom of Duke's Archive are good, and the dead babies in Catacombs right before you fight Nito are awesome.
It's worth mentioning that the humanity dropped off the dead babies will sink into the water after about 10 seconds if you let it, so you have to loot them fast. But considering the dead babies will never stop spawning, it's by far the best place to farm humanity.
